Respect for the planet

The natural environment provides the business with the resources it needs to operate, and we are committed to reducing our depletion of these resources and contributing to developing a new way of operating which can begin to give back to nature.

Greenhouse gas emission reduction is a priority focus area. We are founding members of the Zero Carbon Forum, bringing the hospitality sector together to decarbonise the industry and are committed to achieving net zero emissions by 2040, including scope 1, 2 and 3 emissions.

We are currently working through our detailed roadmap to deliver net zero which we will use to monitor and report our progress. We are committed to this aim and therefore will obtain Science Based Target initiative approval of our plan to provide an additional layer of creditability and accountability.

We are working hard to reduce our scope 1 and 2 emissions by lowering the consumption of energy within our businesses and by developing a programme of investment to enhance the efficiency of our buildings and equipment. In addition to focusing on reducing our energy consumption we have worked with our energy providers to ensure that 100% of the energy we use is generated from renewable sources.

Our food purchases represent the largest single contributor to our emissions footprint and represent the emissions generated in the production of the ingredients we use in our menus. This is typical of a restaurant or catering company and reinforces the importance of understanding the food we serve to our guests and the impact that has on the environment. We are working with the World Resources Institute on the Cool Food Pledge programme to develop a roadmap to achieve a significant reduction in the emissions generated by the food we serve. The emissions reduction plan will be designed to lessen the negative impact food production has on biodiversity and maintaining high standards of animal welfare.

Reducing waste is second critical element of our sustainability plan and we have committed to zero operational waste to landfill by 2030. To underpin this target and to reduce our impact on the environment we have set a recycling rate ambition of 80% over the same time period. As at April 2022 we divert 96% of operation waste from landfill and recycle 56% of our overall operational waste.
